You may have noticed a few coffees on our shelves with the “Cafe Delas” title. Cafe Delas is an initiative to provide resources to female producers in coffee. The Cafe Delas program finds female producers and connects them to traders so their coffee can be sold on a larger scale. They also provide infrastructure and quality improvements to women producers in coffee. They advocate for women’s pay, their proper treatment, and their growth in the business side of coffee production. We love to see it.
This coffee is produced by Doña Duglas (Mrs. Duglas) in the high altitude of Villa Corzo, Chiapas. She and her family have been producing coffee since 2016 and she takes an unconventionally hands-on approach to her product. She even hand-picks the ripe cherries on her farm because she believes the women’s hands possess the “strength & delicacy” to note the perfect moment to harvest. The attention to detail doesn’t end there; she then closely monitors the de-pulping, rinsing, fermentation, and drying of the coffee. Dona Duglas turns the coffee on its raised bed based on the weather and texture of the coffee, making the process extremely visceral and personal.
Every year we look forward to bringing in our Mexico offerings. These coffees tend to have a distinct flakey-pastry flavor note and this one delivers! It has nice warm-spice notes along with a tangy, cherry finish. It’s full-bodied, balanced, and sweet. Dona Duglas really knows what she’s doing, and we’re so grateful we got a taste of her crop this year!
